Cinghiale (wild boar) Stew from Sardinia

Italian Food (Cibo Italiano)

Ingredients:
2 pounds Cinghiale (wild boar) (cubed into bite size pieces)
4 tablespoons extra virgin olive oil
1 onion (finely chopped)
2 carrots (1 finely chopped 1 cut in bite size pieces)
1 zucchini (cut in bite size pieces)
1 celery stalk (finely cut)
¼ teaspoon nutmeg
2 cups Italian red wine (from Sardinia)
3 plum tomatoes (blanched and skinned)
1 cup homemade beef broth
Sea salt and fresh ground black pepper to taste.
Fresh Italian parsley (roughly chopped)

Instructions:
First heat olive oil in large skillet over medium high heat, then lightly sear boar on each side (about one 1 ½ on each side) then remove boar from heat and set aside. Add to skillet onions, carrots, celery, and zucchini plus nutmeg and a little salt and pepper, let cook about 10-15 minutes until vegetables are soft. Then add boar, Italian wine, and let cook about 12 minutes; then add tomatoes and lower heat; simmer for additional 15 minutes.
Spoon into bowls, add parsley and serve immediately.

This Italian red wine from Sardinia is an excellent wine with authentic Italian food from the region of Sardinia. Tasting notes: Pronounced ruby red color with aromas of cherries, spice, pepper, and a hint of licorice; flavors carry forward from aromas with the addition of ripe fresh fruit, white chocolate, citrus, and mint. Full bodied with good balance this wine stands alone just fine but is excellent when paired with the proper food.
