Light Apple Cake

Here os the recipe to a great Apple Cake - light, soft and moist - with no eggs or butter, perfect for a delightful breakfast or afternoon tea!

One apple a day keeps the doctor away... doesn't mean we can't put it in a cake! This super moist cake will keep for a couple of days, I like to make it and take it to the office to share with everyone :-) Also perfect as part of a house hosted high tea, together with some cupcakes an fine chocolates.

Before starting, please note that the measurements are given in "single serving yogurt tubs", where 1 yogurt tub = 125 gr. So basically, I use the tub as a unit of measurement.

If you have a Thermomix, you may want to try making your own yogurt with this fab recipe.

Light Apple Cake

Ingredients

2 single serving white yogurt tubs (250 gr)
3 tubs of flour
1 tub of sugar
7 gr baking powder
1 green apple, chopped
1 tub of seeds oil

Steps

1. Empty two single serving tubs of white yogurt in a large bowl. Keep a tub to use as a measurement unit.
2. Add 1 tub of sugar, 3 tubs of flour, 1 tub of seeds oils, baking powder and the apple.
3. Mix the ingredients until the mixture is homogeneous.
4. Pour mixture in a buttered baking pan and bake in pre-heated oven (fan on) 180ยบ for 30 to 40 minutes.

Tips&tricks

If you're lactose intolerant, or vegan, you can substitute soy yogurt.

Have a Thermomix?
Too easy with a thermie! Here's your steps:

Put yogurt and oil in the bowl. 15 Sec. Speed 5.

Add flour and baking powder. 50 Sec. Speed 6.

Remove the mixture from the bowl and add the apple.

Pour the mixture in a buttered baking pan.

Bake. 30 to 40 Min. 180°C.
