Superfood salad made with Farro, fast easy recipe, healthy
Organic Farro Perlato
Farro Perlato which is translated to "pearl barley" is an Italian specialty that can spruce up what you bring to the table for your loved ones tonight. This organic wheat can be served as a side dish or on its own and is also excellent for soup making and salads, so in other words the possibilities are endless.
This recipe is entirely from scratch, but it does not require a large amount of time to complete.
You will need one cup of Farro rinsed and 2 cups of water to prepare, along with the following.
To create the dressing for the salad you will need:
4 tablespoons of fig balsamic vinegar
2 tablespoons of olive oil
salt and pepper, as desired
1/2 teaspoon of dried Italian spices
1 teaspoon fresh basil, minced
1 garlic clove, minced
red pepper flakes, to taste
To prepare the salad portion you will need:
3/4 cup of minced onion
1 cup minced cucumber, seeded and peeled
1 cup diced tomato
2 tablespoons sun-dried tomatoes packed in oil, minced
1 cup frozen peas, cooked as directed
2 tablespoons pine nuts, toasted rough chopped
1 ounce shredded pecorino Romano cheese
Directions:
First, bring the farro perlato and two cups of water to a simmer in a pot. Allow the farro to cook until tender and season with salt. While your farro cooks, in a large bowl combine your dressing ingredients and stir. Once combined, add the salad ingredients you have prepared and toss gently. Once farro is cooked tender remove from heat, rinse in cool water and drain. Once this is done the farro can be added to into your salad. Allow the flavors come together of this can be served as is or chilled once it has been prepared and can be garnished with salt, pepper, and fresh basil as desired.
For the salad combine all ingredients and mix with Farro.
