Peach, Tomato, and Mozzarella Salad


      O.k......this may not seem like a real recipe to you but, rather, a few ingredients arranged on a plate together.  But, it really is more than that.  It's more like....well.......I think of it like when a few old friends get together.....you know, the friends you're used to seeing together, the friends that always seem to be having a great time, thoroughly enjoying each other's company and bringing out the best in each other. 

       And, then....someone new moves into town.  She seems sweet enough.....friendly enough, although no one's sure if she'll really fit in with the already well-established social circle.  But, it's decided that she should be invited to join the group for a little social gathering......to get to know her  a little better....you know, to kind of test the waters.   


      And, guess what?  She not only fits in, she brings a whole new and surprisingly wonderful element to the group!  I guess it goes without saying, that a new friend is made!  

      Yeah.....that's what it's like!  

      Ripe summer tomatoes, fresh mozzarella, basil, a good extra-virgin olive oil.....these are the ingredients you expect to find in a typical Caprese Salad.  But, peaches???  

      When I first came across this recipe, I thought it sounded interesting.  But...I wasn't sure how the peaches would fit in with the tomatoes and cheese, etc.  I was very pleasantly surprised!  They add the perfect amount of sweetness, balanced with the acidity of the tomatoes and the richness of the olive oil.  It is yummy!  And, a great salad for a summer picnic or barbecue!

Here's all you need:


Peach, Tomato, and Mozzarella Salad

3 firm, but ripe peaches
2 ripe medium tomatoes
Coarse salt
8 oz. fresh mozzarella
12 fresh basil leaves
1/4 cup extra-virgin olive oil

Before assembling the ingredients, wash the tomatoes and peaches well.  Cube up the mozzarella, then cut the peaches and tomatoes into slices.





Alternate the peach and tomato slices on a platter and sprinkle lightly with the salt.  Place the mozzarella down the center.  Tear the basil into bits and scatter over the top.  Drizzle with the olive oil and serve.  That's it!!
